Jalapeno Cheese Bread

This isn’t a meal, though it could be. LOL

Over the summer, my sister and I did lots of cooking over the coals in our cast iron cookware. One of my favorite things to make is fresh bread in the Dutch oven over the coals.

It helps that we glamp, in other words, we camp in trailers so we have the cookware, bowls, counter space, sinks, etc. Not that it can’t be done when you’re rustic camping, it just makes clean up easier.

I found a simple recipe for bread involving just flour, water and a yeast packet.  After mixing and kneading, I put parchment paper in a large bowl, set the dough in it and cover it with a towel for an hour to rise.  Then, I lift it out by the parchment paper and set it in the Dutch oven over the appropriate amount of coals.

I don’t eat bread often, so this really is a treat. To make things more delicious, I’ve started adding chopped jalapenos and coarsely shredded cheddar cheese into the dough before letting it rise. The coarsely shredded cheese (you might find it as “thick cut”) works nicely as it doesn’t melt into the bread when baking and you get little gooey pockets of cheese.

This bread gets requested on many a camping trip and goes especially well with any Mexican dish.
