Labor Day weekend is over but I’m not even close to being done yet. We lucked out this past holiday with an entire weekend of blue skies and low humidity. Yay!
So this weekend’s Howell Happy Hour Special would be Roasted Marshmallow Shots, an idea I found on either Facebook or Pinterest. I had my doubts, but thought I’d give them a try. The concept was simple – roast a marshmallow, hollow out the inside and you have an edible shot glass to fill with whatever would go well with marshmallow. Aldi’s had giant marshmallows (the normal size ones I think would be too small) and I grabbed some O’Donnell’s Irish Cream.
So the roasting began that afternoon.
Thinking that it would be rather difficult to hollow out a warm, squishy marshmallow, I stuck them in the freezer to harden.
This made things no easier. It was friggin impossible to cut out the middle of a marshmallow. Perhaps my freezer wasn’t cold enough or I took them out too soon.
Bill hollowed one out with a spoon and then roasted it, but the fork poked a hole in the bottom and I then had to try and patch it with its own gooey stickiness. Sigh.
Then he tried heating a knife and then cutting into it. After the smoke cleared, we saw that didn’t work either. Bless him for being so dedicated to my craziness.
Okay. Plan B. I remembered seeing another idea – Bailey’s Dipped Marshmallows. Since the shot glass thing was a major fail, out came the dessert cups and we poured our liqueur over the marshmallows.
Not what I intended, but they still went over well.. Cheers!
