I’m a bit late posting this, this summer is flying by! Father’s Day weekend could not have called for better weather! We enjoyed another trip out with our family and friends at Bishop Lake, “corralling” our trailers so that we formed a circle.
When we were here last on our first trip out of the season, they were just putting in some huge boulders in the lower loop. We didn’t know what it would be at the time. It’s a sandbox! Pretty cool.
They also put in tetherball!
Saturday evening it was time to attempt dinner – Campfire French Bread Pizzas was this weekend’s adventure! I did it a bit differently than in the link – I found a round loaf of french bread and sliced it lengthwise, scooping out some of the soft bread (yum!) to accommodate the toppings. The rest is obvious – sauce, cheese, whatever you like. We went with our favorite, pepperoni and banana peppers.
And off to the fire it goes!
It took longer than I thought to cook. I was afraid of burning the outside so I took it off after about 15 minutes, flipping it occasionally, but the cheese was not even melted. Back on the grill it went for another 15 minutes and it was perfect!
I’ll try this again and see if I can do it with less bread. Or maybe cook them on foil over the grill, without the top piece of bread, loosely covered in foil so the cheese melts. Anyway, they were delish!
We missed the Father’s Day cookout on Sunday, having to work Monday and be off the site and home. So we said our goodbyes and were off. Our next trip out is the 4th of July holiday, just Bill and I! We won’t have anyone around to try out recipes on. 🙁 I’ll have to get creative.
