Happy St. Patrick’s Day! I’m not Irish, but I have a Irish name, which was changed from Katherine at the last moment thanks to my older sister. Having an Irish name also keeps me exempt from wearing green on St. Patrick’s Day (my own rule).
Anyway, no green beer for this girl (it’s Tuesday night for crying out loud), so the greenest I’ll come close to is whipping up a batch of baked kale chips. This isn’t by any stretch a food blog, but I wanted to share this as I talk to more and more folks who aren’t familiar with them or have never made them. Super easy!
These are my new fave, although they’ve been around a while. Simply toss the leaves with olive oil and your favorite seasoning, spread out on parchment paper and bake at 350 for 20 minutes. Fresh spinach also works well.
They come out a crispy, salty awesomeness and it’s a great way to sneak in veggies and your daily healthy oil. A good friend of mine once said, “vegetables are a vehicle for butter and salt”. Though I love vegetables, there is some truth to that! I’ve never been a chip fiend, but I could seriously live without other chips if I had these. And the stems make a nifty handle!
True story: this is the first batch of kale chips in this attempt. I thought my rocking chair made a neat backdrop for this shot, so to keep it level, I placed my foot on the base to tip it forward while I took the photo. Photo taken and without thinking (of course) I moved my foot and the entire plate and contents slid out the back of the chair into a pile on my carpet. Sigh.
So if you’re just stumbling in the door and need something salty to chase all the green beer, give these a try! Just try to keep the plate level.

Karen! We’ve missed you. Thanks for stopping by. I have not tried store bought chips yet. These are so quick and easy to mix up and pop in the oven. I actually started with spinach but had kale the day I wrote this post. Hope you’re doing well..
