Wiggly Corn

So the prompt was What food do you reject on the holiday table and why? from the Blogher Writing Lab. It immediately took me back over 20 years to Thanksgiving at an ex-boyfriend’s mother’s house, where every year a side dish was served that contained jello and corn. I think it was lemon jello. And corn.  Hence the name it received, wiggly corn.

I think it was some sort of a corn relish, but in a ring shaped jello mold, with other colorful chopped up bits of something added in.  I just remember thinking corn should not be served cold, and jello should not contain corn.

Bless her heart, my ex’s mother made this dish every year. Most everyone avoided the wiggly corn, trying to hide their smiles and stifled giggles, though I do remember one person trying it, for the sake of being polite, I’m sure.

I haven’t thought of the wiggly corn in years. To this day, I don’t know what I’m missing, and that’s perfectly fine with me.
