I really need to plant another garden. It’s been a few years since we’ve attempted to grow anything, our yard is pretty shady. Kinda sounds funny. Anyway.
Today’s post is about one of my favorite summertime recipes, Peach Tomato Gazpacho. I brought this to a family gathering once and my older sister cornered me and demanded the recipe. I mean, DEMANDED. I thought she was going to stab me.
I originally found the recipe at Epicurious, but I simplified it (of course!) I ditched the crushed ice and tarragon ideas and simply chopped the veggies and tossed them with vinegar, oil, salt and pepper. (smacking lips) Good enough for me!
I chop tomatoes, canned rinsed peaches (use fresh if you want) and green onions – my favorite! I have some sitting in water, the roots are getting pretty long. I need to plant them somewhere or put them in a pot and see what happens.
Mix together and toss with olive oil, vinegar, some salt and pepper. The recipe above specifies how much, but I’ve been making this so long I just wing it.
And that’s it! Like some dishes, it’s better the next day after marinating in the vinegar a bit. I’ve really developed a taste for veggies tossed with vinegar over the summer, so sometimes I’ll just do tomatoes, cucumber, onion (green or red), green peppers or celery, but the peaches in this recipe is a nice touch. Yum! Light, healthy and tasty.
