Day 9 of NaBloPoMo! Today’s prompt is What is your favorite weekend breakfast and why? Tell us a bit about the memories you have associated with it. And maybe share a recipe if you have one?

Not long ago, my five siblings and I all flew down to Florida to celebrate my Dad’s 90th birthday. With seven people under two roofs (my Dad’s house and my sister’s just down the street), we planned menus and shopped for the week, and cooked meals together. Dad’s birthday came and went, it was really a nice time, as we don’t get to see each other very often.
On the day before most of us flew home, my sister Chris had a recipe for a breakfast casserole that included hash browns, sausage, veggies and cheese, among other things. Something to prepare the night before and pop in the oven in the morning, a quick breakfast for those who were on their way out to catch flights.
The bubbling pans came out of the oven that Saturday morning and OMG, it was awesome!! Seconds were served all around. The recipe was on a card from Tennessee Pride sausage. The only thing is I don’t recall using french onion dip.
It was during this time (it may have started earlier) that my brother-in-law started to mess with my sister by occasionally calling her Tina (her name is Christine and she goes by Chris).
Thus, the casserole got its name.
My sister and I camp often and her casserole has become a popular dish to take camping – prepare at home, stick in the fridge, pop in the oven at the campsite (we both are glampers). It reheats very well, so you have breakfast for two days, at least.

Sounds yummy!! I made a breakfast casserole recently but it only had sausage, eggs & cheese ~ Keto friendly but I bet adding veggies to it would be better!
I think I’ve had the vegetarian version of this breakfast casserole.
